The densest good-eating miles in Europe, and October is when the grill towns peak — turbot season, harvest in Rioja, no festival crowds. Iberia Avios transfer from both Chase UR and Amex MR, putting Austin–Madrid–Bilbao business class at sane rates while cash fares for fall stay ugly.

One night above the harbor in txakoli country — Hotel Iturregi, a small luxury house buried in the vines above town, or the stone-walled Saiaz Getaria Hotela on the medieval main street with rooms hanging over the sea.

Belle-époque grande dame or seafront classic — Hotel Maria Cristina, the film-festival flagship on the river, or Hotel de Londres y de Inglaterra planted mid-curve on La Concha.

Old-town boutique steps from Laurel — Hotel Calle Mayor, built into a 16th-century palace; the upgrade play is Gehry's ribboned Hotel Marqués de Riscal in Elciego, 25 minutes out among the vines.

The treasury

$8,000–12,500 for two from Austin: premium-economy air ($1,200–1,800 pp in October), boutique four-stars averaging $250–400/night with one grande-dame or Gehry splurge, a week's rental car (~$450), and a food line that takes Elkano (~€200 pp) and one three-star lunch (~€300 pp) seriously — pintxos crawls themselves are mercifully cheap.

Chase UR and Amex MR both transfer 1:1 to Iberia Plus; off-peak business class on Iberia's Dallas–Madrid nonstop prices around 42,500 Avios each way, the Madrid–Bilbao tag adds roughly 6,000, and the AUS–DFW positioning hop is a cheap cash or American Airlines AAdvantage ticket. Late-September/October off-peak space is genuinely findable — confirm award seats before transferring, because Avios transfers are a one-way door.

Straight talk

Elkano books out weeks ahead in October turbot season — lock the table first and build the nine nights around it; the family's casual sister room Elkano Txiki is the fallback, not the plan.
Mondays are dark: La Cuchara de San Telmo and half the Parte Vieja close, and Mercado de la Ribera sleeps on Sunday — sequence market mornings and star bars around the calendar. Kitchens run roughly 1–3:30 and 8:30–11; at 6pm you will find nothing hot anywhere.
Do not drive to a txotx — the Astigarraga cider houses like Petritegi are a 15-minute, ~€20 taxi from San Sebastián, and the barrel stream is bottomless. Same logic on the Rioja loop: whoever drives spits.
The route ends 1¾ hours from Bilbao Airport — book a departure no earlier than midday, or drive back and sleep airport-side the final night; confirm the one-way rental drop at Bilbao when you book the car.

With a small one (●●○ doable with a little one): Dinner starts at nine and pintxos bars are standing-room, but no country seats a toddler in a restaurant more warmly — do the crawl at 1pm and La Concha beach at 7.
